# NIX // CHILLI MANGO SUPER
NIX // CHILLI MANGO SUPER
Some ideas start sensibly.
This one started with a BuzzBallz Biggie.
I wanted to know where I could buy the big 1.75 litre bottles, then naturally the next question arrived:
Could I make my own?
Then, because this is NIX, that became:
Could I make one better, build it as a proper 2 litre batch, freeze it, bottle it and turn it into something worth keeping in the NIX freezer?
And that is how NIX // CHILLI MANGO SUPER was born.
Not quite a cocktail.
Not quite a slush.
Definitely not subtle.
It is cold mango, sharp lime, tequila and chilli wrapped together into a bright orange frozen bottle of poor decision-making.
In the nicest possible way.
THE IDEA
The target was simple.
I wanted something inspired by the sweet-hot character of BuzzBallz Chilli Mango, but I did not want to just copy the idea ingredient for ingredient.
The NIX version needed more depth.
More fruit.
More citrus.
A cleaner chilli finish.
And most importantly, it had to work properly from the freezer.
The final recipe ended up using mango, orange, pineapple, passion fruit, lime, tequila and a homemade chilli syrup.
The idea is that the first taste is big ripe mango.
Then the citrus wakes everything up.
Then the tequila appears.
Finally, the chilli arrives at the back of the drink and hangs around just long enough to make you want another sip.
Not mouth-on-fire chilli.
Not macho nonsense.
Just warmth.
THE 2 LITRE SUPER BATCH
The final NIX batch makes 2 litres.
That gives me:
10 × 200 ml bottles
which feels exactly right.
A proper batch.
A proper freezer supply.
And a very tidy little production run.
Ingredients
675 ml blanco tequila
660 ml mango nectar
200 ml smooth orange juice
150 ml fresh lime juice
120 ml pineapple juice
100 ml NIX chilli syrup
50 ml passion fruit juice or purée
20 ml agave syrup
15 ml cold water
Small pinch of fine sea salt
That lands bang on 2 litres.
The salt is tiny but important.
It does not make the drink taste salty.
It simply wakes the fruit up and makes the mango taste fuller.
THE NIX CHILLI SYRUP
This is where the drink gets its personality.
The syrup is deliberately simple:
200 ml water
200 g sugar
2 fresh red chillies
½ teaspoon lime zest
Tiny pinch of salt
Warm the water and sugar gently until the sugar dissolves.
Add the chillies, lime zest and salt.
Turn the heat off.
Then leave it for around ten minutes.
Taste it.
If it is warm enough, strain it.
If it needs more bite, leave it another five minutes.
The aim is flavour first and heat second.
The chilli should creep in rather than kick the door off its hinges.
BUILDING THE BATCH
The tequila goes in first.
Then the mango.
Then orange, lime, pineapple and passion fruit.
Then the chilli syrup.
Then agave.
Then water and the smallest pinch of salt.
Mix everything thoroughly.
And before any of it goes near the freezer, taste a little over ice.
That bit matters.
Cold changes the way chilli and sweetness behave, so the mix should taste slightly more expressive before freezing than you expect the final drink to be.
If it needs more chilli, add syrup in small amounts.
If it is too sweet, add a touch more lime.
If the tequila is too dominant, a little more mango pulls it back into line.
This is one of those recipes where tiny changes matter.
WHY FREEZE IT?
Because this drink makes far more sense frozen.
At around cocktail strength, with alcohol and sugar in the mix, it should not freeze into a solid brick.
Instead it should turn into something closer to a thick frozen slush.
Exactly what I wanted.
The plan is to portion the 2 litre batch into 200 ml freezer-safe bottles, leaving a little room at the top for expansion.
Then freeze them.
When I want one, I can take a bottle out, let it soften slightly, shake it hard and pour.
Simple.
No blender.
No faffing.
No kitchen takeover.
Just:
FREEZE. SHAKE. POUR.
That may end up being the entire NIX drinks philosophy.
THE SERVE
There are two ways I can see myself drinking this.
The easy way:
Take one 200 ml bottle from the freezer.
Let it soften slightly.
Shake it.
Pour it into a cold glass.
Done.
The better-looking way:
Use a wide cocktail glass with crushed ice and a half-rim of chilli, sugar, salt and lime zest.
Only half the rim.
That way one side gives you the spice and the other stays clean.
It also looks properly dramatic.
Which, naturally, matters.
THE FLAVOUR
The final profile should go something like this:
MANGO
Big, thick and tropical.
Then:
CITRUS
Fresh lime and orange cutting through the sweetness.
Then:
TROPICAL FRUIT
Pineapple and passion fruit filling the middle.
Then:
TEQUILA
Enough to remind you this is definitely not breakfast juice.
Then finally:
CHILLI
A warm finish rather than a punishment.
That balance is the whole point.
WHY “SUPER”?
Because the first version was too simple.
Mango, tequila, orange, lime and chilli would work.
But this one feels more finished.
Pineapple adds brightness.
Passion fruit adds sharpness.
Agave rounds the tequila.
Salt makes the fruit pop.
The chilli syrup gives better control than simply throwing chilli powder into the mix.
It is still straightforward enough to make at home, but it now feels like a proper NIX recipe rather than an experiment in a jug.
THE NIX VERSION
This is exactly the sort of thing I like doing.
See something.
Research it.
Pull it apart.
Work out how it works.
Then rebuild it in a slightly more ridiculous way.
A BuzzBallz Biggie started the idea.
A 2 litre NIX frozen batch is where it ended up.
And knowing me, this probably will not be the last version.
There may be more chilli.
There may be less chilli.
There may be a darker mango version.
There may even be a full NIX frozen drinks range.
That freezer door may yet become Mission Control.
For now though, there is one bottle I really want waiting in there:
