CHAPTER

QUICK DOUGH CHECK

After a few minutes, the dough should form a soft, smooth ball.

If it looks too dry, add 1 teaspoon of water.

If it looks too wet, add 1 teaspoon of flour.

Only make tiny adjustments.

CHAPTER

WHEN IT’S FINISHED

Remove the loaf from the pan straight away.

Cool it on a rack for around 30 minutes before slicing.

CHAPTER

WHAT TO EXPECT

Soft white crumb.

Gentle mature-cheddar flavour.

A subtle sweet, tangy citrus edge from the Elvis Juice ketchup.

MY INSPIRATION

I wanted a soft white loaf from the PN100, but not another ordinary white loaf.

Mature cheddar was the obvious starting point.

Then came the idea of using BrewDog Elvis Juice ketchup to add sweetness, acidity and a little citrus character without turning the loaf into tomato bread.

The whole idea was to keep it simple.

Everything in from the start.

No stopping.

No ingredient beep.

No faffing.

Just load the PN100 and let it do the work.
