NIX CHUTNEYS

CHAPTER

A NEW LITTLE VENTURE BEGINS 🫙🧀🍎🟠

There are some ideas that arrive with a business plan, a spreadsheet and a frightening sense of seriousness.

And then there are ideas that begin with cheese. 🧀😄

This one began with cheese.

Cheese, biscuits, crusty bread, a good ploughman’s sort of mood… and that little voice in my head saying:

“Hang on… I could make this.” 👀

And just like that, NIX CHUTNEYS was born.

Not in a factory. Not in a shiny studio kitchen. Not with investors, consultants or some overexcited branding agency charging a fortune to tell me that jars should look “artisan.” 🙄

No. This starts the proper way.

In my kitchen. With me. A saucepan. A wooden spoon. A pile of apples and onions. And a genuine mission to create chutneys that belong next to proper food. 🫙🍎🧅

This is not about pretending to be a massive food business overnight.

This is about building something the NIX way:

small batch well thought out well tested visually smart and genuinely good.

That part matters most.

Because the jar has to earn the label. 🟠

“Some ideas begin with venture capital. This one began with cheddar.” 🧀

CHAPTER

WHAT NIX CHUTNEYS ACTUALLY IS

At the moment, NIX CHUTNEYS is a tiny little chutney laboratory. 🔬🫙

That sounds grander than it is, but I quite like that.

This first phase is not about filling shelves or producing huge volumes. It is about experimenting properly and seeing what works.

I am starting with small test batches of around 500–600g finished chutney per flavour. That should give me roughly three small tasting jars.

One for me. One for Mum. One for Fiona. 👩‍🔬👩‍🔬👨‍🔬

And there you have it — the entire NIX Chutneys research department.

That’s the tasting panel. That’s quality control. That’s product development. That’s market research. And, if a batch goes wrong, that is also the complaints department. 😂

It is small on purpose.

I do not want to make twelve jars of something only to discover it tastes like spicy pickled regret.

I want to make one batch, taste it properly, record everything, get honest feedback, improve it, then move on to the next version.

That feels right. That feels measured. That feels NIX. 🟠

The goal right now is not scale. The goal is learning.

CHAPTER

WHY CHUTNEY? 🤔

I’ve actually thought quite a bit about this.

Why chutney?

Why not jam? Why not sauces? Why not relishes? Why not pickles?

And I think the answer is simple.

Chutney sits in a really lovely place. It is traditional, useful, full of character and built for real food. It belongs next to strong cheddar, cold meats, crackers, crusty bread, pork pie and all the sort of things I genuinely enjoy eating. 🧀🥖🍖

It’s not decorative food.

It has a job to do.

A good chutney lifts a simple lunch into something far more satisfying. It turns a board of cheese and bread into a proper event. It adds sharpness, sweetness, spice and depth all in one spoonful.

And there is also something brilliantly old-fashioned and satisfying about making it.

Apples being chopped. Onions softening. Vinegar rising into the kitchen air. Jars lined up ready. The pan slowly thickening and darkening. The whole thing becoming sticky, rich and full of promise. 😍

In a world full of screens, updates, chargers, cables, subscriptions and apps, I quite like the contrast.

This is apples, onions, vinegar and patience.

No Bluetooth required. 📵😄

Although if you know me, give it time and I’ll probably want live telemetry for the saucepan.

“Chutney belongs with proper food — cheese, bread, crackers, cold meats and a good appetite.” 🫙🧀🥖

CHAPTER

WHAT I WANT NIX CHUTNEYS TO BECOME

I want this to become a proper little NIX venture.

Not overblown. Not silly. Not try-hard. Just good.

I want it to feel personal, thoughtful and built from genuine trial and error.

I want each flavour to have a reason for existing.

I want each jar to feel like it belongs in my world.

That means the branding matters. The naming matters. The presentation matters. The records matter. The tasting matters. But above all…

The chutney itself matters. 🫙

Because I do not want NIX CHUTNEYS to be one of those ideas where the logo is better than the product.

The jars have to be worth opening.

They have to taste right.

They have to work with proper mature cheddar. They have to sit beautifully with crusty bread. They have to earn their place on a ploughman’s board. 🧀🥒🥖

That is the standard.

CHAPTER

THE FIRST FLAVOUR

The first official flavour is exactly where it should be:

CHAPTER

NIX PROPER PLOUGHMAN’S 🫙

That name tells you everything.

This is not a confused chutney. It knows what it is. It knows what it is for. It belongs on a cheese board.

It is built around the flavours I think should sit at the heart of a classic ploughman’s-style chutney:

apple 🍎 onion 🧅 raisins 🍇 dark brown sugar malt vinegar cider vinegar mustard ginger warm spice black pepper salt

Nothing gimmicky. Nothing stupid. Nothing pretending to be cleverer than it is.

Just a proper savoury-sweet, tangy, slightly spiced chutney designed to make a slab of cheddar even better.

And to me, that is a very strong opening statement. 💪🧀

If Batch 001 works brilliantly with mature cheddar, then the whole project starts on the right road.

CHAPTER

THE NIX CHUTNEYS LAB APPROACH 🔬

This is the bit I’m weirdly excited about.

Every batch gets treated like a proper development project.

Each chutney will have:

a flavour name a batch number ingredient weights date made cooking time finished weight number of jars texture notes taste notes and feedback from the test panel

So instead of just “Apple Chutney,” I’ll have something more like:

CHAPTER

NIX CHUTNEYS

CHAPTER

PROPER PLOUGHMAN’S

CHAPTER

BATCH 001

CHAPTER

14 OCT 2026 🟠

I love that.

It gives the whole thing a sense of progress and identity.

And it means every batch becomes part of a story.

Batch 001 might be good. Batch 002 might be better. Batch 003 might suddenly hit the sweet spot. And if Batch 004 goes wildly off course, at least I’ll know exactly what changed. 😄

That is the beauty of doing it methodically.

Not fussy. Not corporate. Just organised enough to improve properly.

CHAPTER

THE TASTING PANEL 👀

This is where things get serious.

Or at least as serious as three people with cheese and crackers can get.

The plan is simple.

Every batch gets split into three tasting jars.

One for me. One for Mum. One for Fiona.

They’ll try them over several days in the real world — not just one tiny spoonful straight from the pan. That’s important.

I want them with proper mature cheddar. I want them with bread. I want them with crackers. I want honest opinions. Not polite ones. 😄

I don’t want:

“That’s nice.”

I want:

Too sweet. Too sharp. Needs more onion. Less vinegar. More mustard. Bit runny. Great with cheese. Not so good with ham. Would absolutely want another jar. Would not want another jar.

That is useful feedback.

That is how recipes get better.

CHAPTER

NIX SCORECARD IDEA 📋

Taste /10 Sweetness /10 Sharpness /10 Texture /10 Spice /10 Works with cheddar /10 Works with crusty bread /10 Would you want another jar? YES / NO One thing you would change

That final one might tell me more than all the numbers put together.

CHAPTER

PULL QUOTE

“The test is simple: does it make a good piece of cheddar even better?” 🧀🔥

CHAPTER

WHY SMALL BATCHES MAKE SENSE

I am deliberately starting small.

Very small, really.

And I think that is one of the smartest parts of the whole idea.

A finished yield of around 500–600g per flavour is enough to make this worthwhile without it becoming overwhelming.

That means:

enough for proper tasting 🫙 not so much that waste becomes a problem easy to compare batches easy to improve recipes easy to keep it fun

There is absolutely no point making huge volumes at the start.

If a batch is average, I only want three jars of average chutney, not twelve.

If a batch is brilliant, I can make it again.

Simple.

This is recipe development, not mass production.

And I think keeping that clear in my head is really important.

Small batches mean small risk and better learning.

CHAPTER

THE FORTNIGHTLY RHYTHM ⏳

I am aiming for one new batch every fortnight to begin with.

That feels like the right pace.

Fast enough to keep momentum going. Slow enough to actually taste and reflect.

Because chutney needs a bit of time.

You cannot really judge it properly five minutes after it comes off the hob.

The flavours settle. The sharpness softens. The spice blends in. The apple and onion become more rounded. The whole thing starts to feel more complete. 😌

So a fortnightly rhythm gives me time to:

make a batch label it taste it share it get feedback make notes adjust the recipe then go again

That feels like a genuinely enjoyable project rather than something rushed.

And if I’m honest, I quite like the idea of NIX CHUTNEYS ticking along steadily in the background — one little jarred experiment at a time.

CHAPTER

THE LOOK AND FEEL OF THE BRAND 🟠

Because it is NIX, the visual side obviously matters too.

NIX CHUTNEYS needs to feel like it belongs inside the wider NIX world.

That means:

graphite and dark tones clean design strong typography NIX orange accents a premium but grounded feel something modern but not cold

I do not want it to look like a generic supermarket preserve.

I also do not want it covered in gingham with cartoon apples and a drawing of a cottage. 😄

There is a middle ground I really like:

a proper food product with a bit of edge a bit of confidence a bit of NIX identity

So the jars, labels and names will all evolve in that direction.

I want them to look smart.

But not more important than what is inside them.

CHAPTER

THE FUTURE FLAVOURS ALREADY BREWING IN MY HEAD 💭🫙

Even though I’m starting with Proper Ploughman’s, I’ve already got plenty of ideas bubbling away.

CHAPTER

NIX PROPER PLOUGHMAN’S 🧀

The classic. Apple, onion, malt vinegar and mustard.

CHAPTER

NIX RED ONION RESERVE 🧅

Richer, darker and made for strong cheddar.

CHAPTER

NIX APPLE, CHILLI & GINGER 🌶️

A brighter, livelier chutney with a proper little kick.

CHAPTER

NIX HOT STUFF 🔥

For the people who think normal chutney is a bit too polite.

CHAPTER

NIX CHRISTMAS JAR 🎄

Apple, cranberry, orange and warm spice — made for festive leftovers and winter cheeseboards.

CHAPTER

NIX DARK & STICKY 🌙

Dates, dark sugar, balsamic and onion. Something moodier and richer.

CHAPTER

NIX PUB BOARD 🍺

A chutney built specifically for pork pie, cheddar, ham and a pint.

I love that these are already starting to feel like personalities rather than just recipes.

But I am absolutely not sprinting ahead.

One jar at a time.

One batch at a time.

That is the rule.

CHAPTER

THE RULES OF THE PROJECT 📜

Every decent venture needs rules, so here are mine.

Rule one: start small. Rule two: write everything down. Rule three: do not pretend Batch 001 is perfect. Rule four: get honest feedback. Rule five: the chutney must work with real food. Rule six: no nonsense flavours just for attention. Rule seven: if I would not happily eat it myself, it does not get the NIX name.

That feels like a solid constitution for a tiny chutney empire. 😄🫙

The jar must earn the label.

CHAPTER

WHAT SUCCESS LOOKS LIKE AT THIS STAGE

Success right now is not a farm shop. It is not a website shop. It is not retail distribution. It is not pallets of onions turning up on the drive. 😄

Success at this stage looks like this:

Mum saying she wants another jar. Fiona clearly preferring Batch 003 to Batch 002. Me nailing a recipe twice in a row. A tasting jar being emptied far too quickly. A flavour beginning to feel truly “mine.” A little range starting to take shape.

That is the win.

That is more than enough.

Because if I can make one genuinely excellent chutney — one that belongs with a chunk of cheddar and a piece of crusty bread — then the whole idea is justified.

Everything beyond that is a bonus. 🧀🥖🫙

[PHOTO CUE: filled chutney jars cooling on the side with visible batch labels]

CHAPTER

A VERY NIX KIND OF PROJECT

The more I think about it, the more this feels exactly like the sort of project I would end up starting.

Take something simple. Get interested in it. Take it seriously. Have fun with it. Measure it. Name it. Brand it. Refine it. Document it. Turn it into a little system. Then see how far it can go. 😄

That is basically how my brain works.

I didn’t wake up one morning desperate to become a chutney mogul.

But I do like the idea of building something small and good.

Something useful. Something tasty. Something real. Something that starts at home and grows naturally if it deserves to. Something with a proper NIX identity.

That is what this is.

And I genuinely think it could become a lovely little venture.

“Three jars. Three testers. One saucepan. One idea. Let the chutney engineering begin.” 🫙⚙️🍎

CHAPTER

SO HERE WE ARE

This is the beginning of NIX CHUTNEYS.

Not a fantasy business. Not a gimmick. Not a logo looking for a purpose.

A proper little venture. Built from real food. Built through trial and error. Built one batch at a time.

The first jar is NIX PROPER PLOUGHMAN’S. The first batch is Batch 001. The first stage is simple:

make it taste it record it improve it repeat it

And honestly, that sounds like exactly the sort of adventure I want. 🫙🧀🍎🟠
