NINJA RAGU
NIX KITCHEN ๐๐ฅ
NIX KITCHEN ๐๐ฅ
DARK NINJA RAGร
๐ฅฉ 250g OF MINCE. ๐ฅท ONE NINJA. ๐ท ONE RIDICULOUSLY SERIOUS SAUCE.
I bought the Ninja soup maker for soup.
Obviously. ๐
But that was never going to last.
Give me a kitchen gadget with buttons, blades, heat and a glass jug and sooner or later Iโm going to start wondering what else I can make in it. ๐งช๐ฅ
Todayโs experiment?
๐ RAGร.
And not just mince swimming around in a tin of tomatoes.
I wanted something darker.
Richer.
Beefier.
Proper comfort food. ๐ฅฉ๐ ๐ท
The sort of sauce that sticks to the pasta rather than running underneath it like a tomato puddle.
And, rather pleasingly, the Ninja can make a cracking job of it.
๐ฅท๐๐ฅ
THE IMPORTANT NINJA BIT โ ๏ธ
Before anything else, one thing matters:
๐ฅ HOT FOOD MUST STAY BELOW THE NINJA HOT MAX FILL LINE.
On my Ninja Foodi Blender & Soup Maker, the hot cooking capacity is lower than the full cold-blending capacity.
So Iโve deliberately built this recipe with a bit of breathing room.
No filling it to the brim.
No bubbling tomato volcano. ๐๐
No redecorating the kitchen ceiling in Bolognese.
The actual HOT MAX line on the jug always wins.
If your ingredients are getting close to it, stop adding liquid.
Simple. ๐
THE NIX DARK NINJA RAGร ๐๐ฅ
Makes around 3 generous portions.
INGREDIENTS ๐
๐ฅฉ 250g beef mince
๐ฅ 40g smoked bacon or pancetta, finely chopped
๐ง 1 small onion
๐ฅ ยฝ medium carrot
๐ฟ ยฝ celery stick
๐ง 1 garlic clove
๐ซ 1 tablespoon olive oil
๐ 1 tablespoon tomato purรฉe
๐ 1 x 400g tin chopped tomatoes
๐ท 75ml red wine
๐ฅฃ 50ml beef stock
๐ฅ 30ml whole milk
๐ฅ 1 teaspoon Worcestershire sauce
๐ฟ ยฝ teaspoon dried oregano
๐ฟ ยฝ teaspoon dried basil
๐ถ๏ธ ยผ teaspoon smoked paprika
๐ง Black pepper
๐ง Salt to taste
OPTIONAL NIX UPGRADES ๐
๐ฅ 1 teaspoon Marmite
๐ง A small Parmesan rind
๐ถ๏ธ A pinch of chilli flakes
๐ A finely chopped mushroom if one happens to be lurking in the fridge
Yes.
Marmite. ๐
Used carefully, it doesnโt make the sauce taste like Marmite.
It simply pushes the savoury beef flavour further into the shadows.
Exactly where I want it. ๐ฅฉ๐ฅ
STEP ONE ๐ง ๐ฅ๐ง
BUILD THE BASE
Into the Ninja go:
๐ง Onion
๐ฅ Carrot
๐ฟ Celery
๐ง Garlic
Use CHOP.
I want small pieces, not vegetable wallpaper paste. ๐
Add:
๐ซ Olive oil
๐ฅ Bacon or pancetta
Then use the Ninja SAUTร function.
Let everything soften.
Let the bacon start releasing its fat.
Let the kitchen begin smelling like something worthwhile is happening.
Then add:
๐ 1 tablespoon tomato purรฉe.
Let that cook briefly too.
This matters.
Raw tomato purรฉe can taste sharp.
Cook it for a minute and it gets deeper, darker and sweeter.
Tiny job.
Big reward. ๐ฅ
STEP TWO ๐ฅฉ๐ฅ
BROWN THE MINCE PROPERLY
This is the bit I will not compromise on.
Get a frying pan properly hot.
Add:
๐ฅฉ 250g beef mince.
Then leave it alone for a moment.
Donโt instantly start smashing it around the pan.
Let the beef actually BROWN.
I want:
๐ฅ Dark edges
๐ฅ Caramelised bits
๐ฅ Proper colour
๐ฅ That glorious sticky stuff on the bottom of the pan
That is flavour.
Keep browning until there is no pink mince remaining.
Then pour in:
๐ท 75ml red wine.
HISSSSSSS. ๐ฅ๐ท
Scrape the bottom of the pan.
Get every last dark sticky bit.
Let the wine bubble away for roughly 2โ3 minutes so it reduces.
What remains is concentrated flavour.
Do not abandon it.
That would be culinary vandalism. ๐
STEP THREE ๐ฅท๐
EVERYTHING INTO THE NINJA
Transfer the browned mince, wine and all those lovely pan juices into the Ninja.
Add:
๐ 400g chopped tomatoes
๐ฅฃ 50ml beef stock
๐ฅ Worcestershire sauce
๐ฟ Oregano
๐ฟ Basil
๐ถ๏ธ Smoked paprika
๐ง Black pepper
Optional:
๐ฅ Marmite
๐ง Parmesan rind
Now stop and LOOK AT THE JUG. ๐
๐ฅ Everything must remain below the HOT MAX fill line.
If youโre closer than youโd like, donโt add any extra liquid.
You can always loosen a ragรน.
Itโs much harder to persuade it back into the Ninja after it has escaped. ๐๐
STEP FOUR ๐ฅ๐ฅท
LET THE NINJA DO ITS THING
Use a manual cooking mode at a medium heat for around:
โฑ๏ธ 30 minutes.
You want a steady cook.
Not a volcanic boil.
Occasionally give it a gentle stir or very brief pulse if needed.
But remember:
๐ซ DO NOT USE THE FULL SMOOTH BLEND PROGRAMME.
Unless your evening meal plan involves drinking beef through a straw.
Weโre making ragรน.
Not meat soup. ๐
WATCH THE SAUCE CHANGE ๐ โก๏ธ๐
This is the lovely bit.
The bright tomatoes start going darker.
The sauce thickens.
The beef flavour moves into everything.
The bacon almost disappears.
The wine stops tasting like wine.
Everything starts becoming one deep, rich sauce.
Thatโs when you know itโs working. ๐ฅ
STEP FIVE ๐ฅโจ
THE MILK TRICK
About five minutes before the end, add:
๐ฅ 30ml whole milk.
Not loads.
Just enough.
It sounds odd if youโve never done it before.
Milk.
Into beef.
And tomatoes.
But it works.
The milk softens the tomato acidity and gives the sauce a slightly rounder, silkier flavour.
You shouldnโt think:
๐ฅ โThat tastes of milk.โ
You should think:
๐ค โWhy does this suddenly taste better?โ
Thatโs the trick.
THE TEXTURE I WANT ๐
The finished ragรน should be:
๐ฅ Thick
๐ Dark brick-red
๐ฅฉ Properly meaty
โจ Slightly glossy
๐ฅ Spoon-coating
Drag a spoon through it and the sauce should briefly hold the line.
If itโs too thick:
๐ฅฃ Add a tiny splash of stock.
If itโs too loose:
๐ฅ Give it a little longer to reduce.
What I do NOT want is mince floating in tomato water.
Thatโs not ragรน.
Thatโs an administrative error. ๐
PASTA MATTERS ๐
Yes, spaghetti works.
But for this?
I want something with shoulders.
๐ Tagliatelle
๐ Pappardelle
๐ Rigatoni
๐ Fusilloni
Something capable of grabbing hold of the sauce.
Cook the pasta until just al dente.
Then mix some of the ragรน THROUGH the pasta rather than simply dropping a ladleful on top.
Finish with:
๐ง Parmesan
๐ฟ Basil
โซ Black pepper
And possibly:
๐ท A glass of the red wine youโve already opened.
It would be irresponsible not to check it. ๐
THE SECRET INGREDIENT โณ
Time.
Make this earlier in the day if you can.
Let it sit.
Then reheat it later.
Somehow, ragรน seems to spend those quiet hours reorganising itself into something better.
The following day?
Even better.
Day-two ragรน is basically a cheat code. ๐ฎ๐
WHY THIS VERSION IS BETTER ๐ฅท๐ฅ
The original version had a little more liquid.
It would probably have fitted.
Probably.
That word bothers me when weโre talking about hot food inside a blender jug. ๐
So Iโve tightened the recipe.
The revised quantities are:
๐ฅฉ 250g mince
๐ 400g tomatoes
๐ท 75ml wine
๐ฅฃ 50ml stock
๐ฅ 30ml milk
That gives me a better safety margin below the Ninjaโs HOT MAX line.
And thereโs another benefit.
Less unnecessary liquid means:
๐ฅฉ More beef flavour
๐ Thicker sauce
๐ฅ Faster concentration
๐ Better cling to the pasta
Basically, safer AND tastier.
Iโll take that. ๐
THE NIX VERDICT ๐ง

FINAL THOUGHTS ๐ฅ๐๐ฅท
This is exactly why I enjoy messing about with kitchen gadgets.
The Ninja doesnโt need to replace the frying pan.
It does what itโs good at.
The frying pan does what IT is good at.
Together?
Thatโs where things get interesting.
๐ฅท The Ninja chops.
๐ฅท The Ninja sautรฉs.
๐ฅท The Ninja cooks.
๐ฅ The frying pan gives the beef the serious colour.
๐ท The wine pulls all that flavour from the pan.
๐ฅ The milk rounds everything out.
๐ And at the end Iโve got a proper bowl of dark, comforting ragรน.
250g of mince.
A few ordinary ingredients.
One slightly overenthusiastic soup maker owner.
And dinner suddenly gets very interesting.
Would I make it again?
๐ฅ ABSOLUTELY.
The Ninja has officially escaped the soup department.
